Potato Salad

The official name for this recipe is Not Good For You But Tastes Great Like Grandma's Potato Salad.

I decided to post some of my recipes so my daughters can always have them. This first one is for Stacy because she loves potato salad even more than me, lol, and because she says she is not a good cook, so here you go Stacy:

                     
First, I don't have the precise amount of each ingredient, it is always a little different each time. You just have to try a little at first and add more if you think you need it. Also, I use either the vinegar or the mustard, not both, but that doesn't mean you couldn't if you want to try it.


 YOU NEED:    
                     some boiled potatoes                  
                     a few hard boiled eggs
                     mayonnaise
                     Dijon mustard
                     cider vinegar
                     celery
                     salt and pepper
                     paprika










 1. Boil the potatoes until soft.
  Cool or put in refrigerator.
  Hard boil eggs (low boil 15 min)
  Then cool or put in refrigerator.








2. Remove potato skin.
 Cut potato into chunks.
 Add a splash of vinegar now if using.        
 Add a bit of salt and pepper.
 Stir until all mixed with the potatoes.








3. Chop up some celery ( 2-3 stalks).
    Add to the potatoes.
     
     









 4. Add mayonnaise about 1/2 to 1 cup.
   Try a small amount first, you can always add more.
   Add Dijon mustard 2-3 tablespoons.
   Mix all until evenly blended.












5. Peel and chop the eggs.
 Add to salad and mix again.
           














6. Lastly, add a sprinkle of paprika.    
   Chill the salad.
   And it always tastes better the next day.
